Dairy Free “Rotel” Dip

I don’t miss too many things from the dairy world but… I do miss Velveeta. Sure it isn’t real cheese and maybe it’s barely considered food, but growing up it was a staple ingredient in macaroni and cheese, cheesy scalloped potatoes, and the midwestern football favorite — “rotel dip”.

I was first introduced to The Honest Company when Trevor and I visited my sister Tiffany in Florida. One night we had nachos for supper and the nacho “cheese” was so good! It was The Honest Company’s “Nacho Style Dip” and I knew it would be a perfect stand in for Velveeta in my favorite tailgating snack. (I’m not a football fan but I am a fan of football fan food!)

I had never seen The Honest Company’s products before our Florida trip so you can imagine how excited I was to find them at my local Target. (I don’t shop at Target often but they carry a few brands I can’t get anywhere else.)

I used two cans of diced tomatoes with green chilis but I recommend only using one if you don’t drain the tomatoes — the extra liquid made it a little too thin.

This is a tasty taco seasoning mix and it really helps to spice up the ground meat of your choice. Be aware; make sure you get the packets that clearly say “Gluten Free” — McCormick has identical taco seasoning that is not gluten free, and it is cheaper, but it contains wheat. I usually find the GF taco and chili seasoning mixes in the Gluten Free Section of my local Walmart.

1 tub of The Honest Company Cheddar Style or Nacho Style Dip

1 lb. ground beef (seasoned with 1 packet of GF taco seasoning of your choice)

1 can diced tomatoes with green chilis

Add ingredients together and bring to a simmer on the stove. Serve with corn tortilla chips and enjoy — perfect for football season or social distancing 😉
