As mentioned in 4 Delicious Summer Drinks, we have quite a few peaches on hand! We haven’t kept them all to ourselves but we still have a good bit left. To avoid wasting food and money, I’m cutting some of them up and freezing them for later!

Since I don’t use Ziplock bags (I’m always trying to reduce unnecessary plastic), my favorite “freezer bags” are actually dishwasher safe, reusable Stasher Bags. I currently only have two of the sandwich size (buying slowly as they are awesome but still a little expensive) so freezing peaches meant first using the frozen bell peppers that were stored in them.

My mini food chopper is actually an attachment for a KitchenAid immersion blender. This all-in-one item has a whisk attachment, three different blender blades, a food chopper blade/cup (shown above) and it also came with a quart measuring cup that can allow it to be used like a regular blender. It was a housewarming gift from Trevor’s grandparents and really pulls its weight!

I followed the ingredients + measurements except…I omitted the optional hot sauce, and because I was using 80/20 ground chuck, I skipped the butter and oil. I also slightly deviated from the instructions — instead of browning the meat and then adding the onions and peppers, I cooked the onions, peppers, and beef together and drained it together in a fine mesh strainer. But otherwise I followed it pretty much exactly!

We served the sloppy mix over toasted bread and in the words of Amanda aka The Chunky Chef, it really was “sweet, tangy, zesty, and savory, with the perfect texture and consistency”.
